So filling ! So pretty! Treat your summer right with these Rice summer rolls!
Ingredients (serving 2-3)
4cups Cooked rice
10-15ea Rice wrapper
3ea Avocado
1/2ea Red cabbage
2tbsp lemon juice
2tbsp sugar
1tsp salt
1ea Kiwi
5ea Cherry tomatoes
1ea Mango
10ea Cocktail Shrimp
1/2cup Salmon sashimi
1/2ea Radish
Leaves : Basil, cilantro, radish sprout
1. Bring water to boil and cook shrimp. Slice veggies and fruits thinly. Slice cabbage very thinly using a peeler, then season with lemon juice and salt, sugar. Shape rice as sushi rice. Set aside.
2. Create good combinations of toppings! We have four suggestions here. Tomato & basil / avocado & salmon / cilantro & shrimp & radish / mango & red cabbage (garnished with radish sprout and black sesame seeds)
3. Dip a rice wrapper into a bowl of warm water and place it onto flat surface such as cutting board, place toppings first, then rice. Fold tight the side of wrapper, then from bottom, roll it toward upper side. Repeat with remaining ingredients.
4. Serve with sweet chili sauce. Dip in the sauce and enjoy! It’s such a filling and pretty summer treats!
