Spaghetti Squash Lo Mein / 스파게티 스쿼시 로 메인

Veggie noodles are tossed together with chicken, carrots, red cabbage and baby bok choy for a spin on the popular take-out item, lo mein! Substitute your noodles with spaghetti squash for a healthier and low-carb alternative.

Ingredients
1 Large Spaghetti Squash
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp fresh Ginger, finely chopped
2 tbsp Vegetable Oil
1 lb Chicken Breast, thinly sliced
2 Carrots, thinly sliced
2 cups Red Cabbage, shredded
1/2 lb Baby Bok Choy, bottoms removed and chopped
Salt, to taste
Pepper, to taste

Chicken Seasoning
2 tbsp Soy Sauce
1 tbsp Sesame Oil
Pinch of Salt and Pepper

Sauce
2 tbsp Rice Vinegar
2 tbsp Fish Sauce
3 tbsp Oyster Sauce
4 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
1 tbsp Corn Starch
1/4 cup Low Sodium Chicken Stock

Garnish
2 Scallions, thinly sliced
1 Lime
Sesame Seeds
